One of my true passions in the kitchen is transforming traditionally less-healthy dishes into better-for-you versions without sacrificing flavor. I love the challenge of taking a beloved comfort food and finding creative ways to lighten it up. This passion stems from a specific memory. Back in my college days, my brother and I had a standing dinner date once or twice a week. Our absolute favorite meal to share was what we affectionately called “queso-changas.” These were, as you might imagine, incredibly delicious but undeniably indulgent. They were deep-fried, loaded with gooey, rich queso, and pretty much the textbook definition of unhealthy comfort food.
After a while, I pretty much swore off those queso-changas entirely. In fact, I swore off all chimichangas for a long time, largely because their fried nature made them feel like an occasional treat rather than a regular meal. While I wish I could share a healthier rendition of my beloved queso-changa, I honestly don’t think it’s possible to make that particular dish truly “healthy” while retaining its essence. So, instead, I’m excited to share another chimichanga recipe that I’ve grown to love just as much, if not more: the Baked Chicken & Avocado Chimichanga. This recipe captures the heartiness and satisfying flavor of a chimichanga in a way that aligns with a healthier lifestyle, making it a perfect addition to your weekly meal rotation.

Ingredients
- 2 large chicken breasts, diced
- Salt and pepper, to taste
- 1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend works well)
- 1 large ripe avocado, cut into small chunks
- 1 tablespoon fresh lime juice (prevents avocado from browning and adds zest)
- ½ teaspoon garlic powder
- ¼ teaspoon cumin (adds a smoky, earthy depth)
- ½ teaspoon onion powder
- ¾ cup plain Greek yogurt (a healthier alternative to sour cream or mayo, adding creaminess and tang)
- 1 ½ cups cooked rice (white or brown rice)
- 8 large burrito-size flour tortillas (whole wheat tortillas are an excellent choice for added fiber and hold up beautifully when baked)
- Optional: 1-2 tablespoons coconut oil for cooking chicken (or your preferred cooking oil)
Instructions
- Prepare the Chicken: Season the diced chicken breasts generously with salt and pepper. In a large skillet, heat 1-2 tablespoons of coconut oil (or your preferred cooking oil) over medium-high heat. Add the seasoned chicken and cook until it’s no longer pink in the center and lightly browned, about 5-7 minutes. Once cooked, set aside.
- Create the Avocado Mixture: In a medium bowl, combine the plain Greek yogurt with the mashed avocado chunks. Stir in the lime juice, garlic powder, cumin, and onion powder until all ingredients are well incorporated and the mixture is creamy. The lime juice not only adds flavor but also helps keep the avocado fresh.
- Combine Filling: In a large mixing bowl, gently combine the cooked chicken, the cooked rice, and the creamy avocado mixture. Mix until all ingredients are evenly distributed, ensuring every bite will be bursting with flavor.
- Assemble the Chimichangas: Preheat your oven to 400°F (200°C). Lay a burrito-size flour tortilla flat on a clean surface. Spoon approximately ½ cup of the chicken and avocado mixture into the center of the tortilla, forming a log shape. Sprinkle generously with about 2 tablespoons of shredded cheese over the filling.
- Fold and Seal: To form the chimichanga, fold the sides of the tortilla inwards over the filling, then roll the tortilla tightly from the bottom upwards. Ensure the seam is secure to prevent the filling from escaping during baking. Place the folded chimichanga seam-down on a lightly greased baking sheet. Repeat with the remaining tortillas and filling.
- Bake to Perfection: Bake the chimichangas in the preheated oven for about 20-25 minutes, or until the tortillas turn a beautiful golden brown and become slightly crispy. The cheese inside should be melted and bubbly.
- Serve Immediately: Remove from the oven and serve hot. These chimichangas are wonderful on their own or with your favorite toppings.
