Mastering Bakery-Style Vanilla Cupcakes: Your Ultimate Guide

What a week it has been! If you follow my journey on Instagram, you might know that my husband, Brian, and I recently enjoyed a whirlwind weekend in Las Vegas. While the memories are fantastic, I admit it took me a good portion of the week to fully recuperate and shake off the travel bug. There’s nothing quite like returning home and craving a dose of comfort and sweetness.

To truly ease back into the routine and bring some joy into our home, a coffee and cupcake party sounded like the ideal solution. It’s a simple pleasure that never fails to lift spirits and bring people together. The timing couldn’t have been more perfect, especially when I discovered a remarkable new product: Dunkin’ Donuts’ Vanilla Cupcake Flavored Coffee! I mean, a coffee that tastes like a cupcake? That, in itself, is a reason to celebrate! It’s truly the best of both worlds, combining two of my favorite indulgences into one fantastic sip.

Naturally, this exciting discovery provided the perfect excuse to bake an abundance of cupcakes. And let me tell you, there’s something incredibly therapeutic about the process of baking. The aroma filling the kitchen, the methodical steps, and the anticipation of a delicious outcome always make me feel happier and more grounded. We don’t often indulge in cupcakes, making them an extra special treat when we do. Knowing that I can now enjoy the comforting flavors of a cupcake and coffee simultaneously with Dunkin’ Donuts Vanilla Cupcake Flavored Coffee brings a smile to my face and a warmth to my soul.

Ingredients

For the cupcakes

  • 1 ½ cups self-rising flour
  • 1 ¼ cups all-purpose flour
  • 1 cup unsalted butter, softened, 2 sticks
  • 2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 1 cup milk
  • 1 teaspoon vanilla extract

For the frosting

  • 1 cup unsalted butter, softened, 2 sticks
  • 6 to 8 cups confectioners’ sugar
  • ½ cup milk
  • 2 teaspoons vanilla extract
  • Sprinkles (optional, for decoration)

Instructions

For the cupcakes:

  • Step 1: Prepare your oven and muffin pans. Preheat your oven to 350°F (175°C). Line two standard 12-cup muffin tins with paper cupcake liners. This recipe makes 24 cupcakes, so ensure you have enough liners ready. Set the prepared pans aside.
  • Step 2: Combine dry ingredients. In a small bowl, whisk together the self-rising flour and all-purpose flour until well combined. This ensures even distribution of leavening agents. Set this mixture aside.
  • Step 3: Cream butter and sugar. In a large mixing bowl, using an electric mixer, beat the softened unsalted butter until it’s smooth and creamy. Gradually add the granulated sugar, beating on medium-high speed for about 3 minutes until the mixture is light, pale, and fluffy. This creaming process incorporates air, which is crucial for light cupcakes.
  • Step 4: Incorporate eggs and alternate wet and dry ingredients. Add the large eggs one at a time, beating thoroughly after each addition until just combined. Next, begin adding the dry flour mixture in three separate parts, alternating with the milk and vanilla extract. Start and end with the dry ingredients. With each addition, beat on low speed only until the ingredients are just incorporated. Be careful not to overmix, as this can lead to tough cupcakes. Use a rubber spatula to scrape down the sides of the bowl between additions to ensure everything is well blended.
  • Step 5: Fill liners and bake. Divide the cupcake batter evenly among the prepared muffin cups, filling each liner about two-thirds to three-quarters full. Bake for 20 to 25 minutes, or until a wooden skewer or cake tester inserted into the center of a cupcake comes out clean. The tops should be lightly golden and spring back when gently touched.
  • Step 6: Cool the cupcakes. Once baked, remove the cupcake pans from the oven and let the cupcakes cool in the pans for about 10-15 minutes. This allows them to firm up slightly. Then, carefully transfer the cooled cupcakes to a wire rack to cool completely before frosting. Frosting warm cupcakes will cause the buttercream to melt.

For the classic vanilla buttercream frosting:

  • Step 1: Prepare the base. In a large mixing bowl, place the softened unsalted butter. Add 4 cups of the confectioners’ sugar, followed by the milk and vanilla extract. Using an electric mixer, beat on medium speed until the mixture is smooth and creamy, which typically takes about 3 to 5 minutes.
  • Step 2: Adjust consistency and flavor. Gradually add the remaining confectioners’ sugar, one cup at a time, beating well for about 2 minutes after each addition, until the frosting reaches a thick, spreadable consistency. You may not need to use all 8 cups of sugar, depending on your desired thickness. For a looser frosting, add a touch more milk; for a thicker frosting, add more sugar. If you wish to add a few drops of food coloring, incorporate it now and mix thoroughly until the color is even.
  • Step 3: Frost and decorate. Once the cupcakes are completely cool, frost each one generously with the prepared vanilla buttercream. Use an offset spatula or a piping bag with your favorite tip for a professional finish. If desired, immediately top with sprinkles for an extra festive touch before the frosting sets.

Notes for perfect cupcakes and frosting

  • Room Temperature Ingredients: For the best texture and consistency, ensure your butter and eggs for the cupcakes, and butter for the frosting, are at room temperature. This allows them to emulsify properly, creating a smooth, homogenous batter and creamy frosting.
  • Do Not Overmix: Overmixing the cupcake batter can develop the gluten in the flour, leading to dense, tough cupcakes. Mix only until ingredients are just combined.
  • Proper Cooling is Key: Ensure cupcakes are completely cool before frosting. Even slightly warm cupcakes will cause your beautiful buttercream to melt and slide off.
  • Icing Storage: The buttercream icing should be used and stored at room temperature. If chilled, it will firm up significantly. To store, place in an airtight container for up to 3 days. If it stiffens too much, let it come to room temperature and re-beat briefly with an electric mixer until smooth again, adding a tiny splash of milk if needed.
  • Customization Options: Feel free to experiment with different flavor extracts in both the cupcakes and frosting. Almond, lemon, or even a hint of coconut can add a delightful twist. You can also add food coloring to the frosting for themed parties.
  • Self-Rising vs. All-Purpose Flour: Using a combination of self-rising and all-purpose flour helps achieve a balanced texture – fluffy yet structured. If you only have all-purpose flour, you can create self-rising by adding 1 ½ teaspoons of baking powder and ¼ teaspoon of salt per cup of all-purpose flour. Adjust accordingly for this recipe’s specific amounts.
