The Story Behind the Sandwich

I’m not usually a big breakfast person, often just grabbing toast or an English muffin. But on this particular morning, I decided to take a photo of my breakfast for my blog. As I stepped outside to snap the picture, something unexpected happened! A praying mantis landed on my head!

I may have overreacted, doing some impromptu “karate” while trying to hold onto my breakfast and camera. (Yes, there might have been a scream or two!). Thankfully, my kids came in, and they were the only ones who might have witnessed the show.

After helping the little guy outside, I finally managed to take my picture! Now, my husband takes these sandwiches to work for breakfast. I make a batch for the week, wrap them in wax paper, and store them in the fridge or freezer. In the morning, he just pops them in the microwave for a quick and easy breakfast.

Normally, I’m not a breakfast eater … toast or English muffins make up 95% of my breakfasts. On occasion, I’ll eat something with a little more substance.

Ingredients



  • 1
    English Muffin,
    split and toasted, buttered if desired



  • 1
    large
    egg,
    or egg substitute equivalent to 1 egg



  • 1
    tablespoon
    water,
    beaten with egg



  • Salt and pepper,
    if desired



  • 1
    slice
    cheese



  • 1-2
    pieces
    Canadian bacon,
    cooked sausage patty or cooked bacon slices

Instructions

  • Spray a large non-stick skillet with cooking spray and preheat over medium-high heat. Pour egg into the skillet and tilt to cover the bottom of the pan. Salt and pepper the egg, if desired. When the egg is set and not runny, fold the two edges (left and right) over the middle. Then fold the two edges (top and bottom) over the middle.
  • Place the egg on the bottom part of the English muffin. Top with cheese and desired meat. Place the top part of the English muffin on the meat.

  • Feel free to use bacon or sausage instead!
