Ingredients
- 1 tablespoon vegetable oil
- 1 ½ lb. boneless skinless chicken breasts, cut into bite-sized pieces
- ½ cup thinly sliced onion
- 2 cloves garlic, minced
- 1 can (14.5 oz.) petite-diced tomatoes, drained
- ¾ cup half & half
- 2 chipotle peppers in adobo, seeded and chopped
- ½ teaspoon salt
- 2 tablespoons chopped fresh cilantro
- 1 lb. pasta (I used mezzi rigatoni, but any short pasta works well)
Instructions
- Heat a large non-stick skillet over medium-high heat. Add the vegetable oil and chicken pieces. Cook for 5 minutes, turning the chicken over after about 3 minutes to ensure even browning.
- Add the thinly sliced onion and minced garlic to the skillet with the chicken. Cook for an additional 3 minutes, stirring occasionally, until the onion softens and the garlic is fragrant.
- Stir in the drained petite-diced tomatoes, half & half, chopped chipotle peppers, and salt. Bring the mixture to a gentle simmer, uncovered, for 4 minutes, stirring occasionally to prevent sticking.
- While the sauce simmers, cook the pasta according to package directions in a separate pot of salted boiling water. Before draining, reserve about ½ cup of the pasta cooking water.
- Once the pasta is cooked and drained, add it directly to the chicken sauce mixture in the skillet. Toss everything together until the pasta is thoroughly coated with the delicious sauce.
- If the sauce seems too thick, gradually add some of the reserved pasta cooking water, a tablespoon at a time, until it reaches your desired consistency.
- Finally, stir in the fresh chopped cilantro. Serve the Chipotle Chicken Pasta immediately and enjoy!
