Ingredients

For the Churros:

  • 1 cup Coffee-mate Abuelita® Mexican Chocolate liquid coffee creamer
  • 1 tablespoon butter
  • ½ teaspoon salt
  • 1 ¼ cups all-purpose flour
  • 2 eggs
  • ½ cup sugar
  • 2 teaspoons cinnamon
  • Oil, for frying (vegetable or canola oil recommended)

For the Dipping Sauce:

  • 2 Abuelita® Mexican Chocolate Drink tablets, chopped
  • ½ cup heavy cream

Instructions

  1. In a deep skillet or fryer, heat oil to 375°F (190°C). Use a thermometer to ensure accuracy for best results.
  2. Meanwhile, in a medium saucepan, bring the Coffee-mate Abuelita® creamer, butter, and salt just to a boil over medium heat. Remove the saucepan from the heat immediately. Stir in the all-purpose flour vigorously until the mixture comes together and forms a cohesive ball of dough.
  3. Transfer the hot flour mixture into a mixing bowl. Using an electric mixer, beat on low speed for 3 minutes to cool the dough slightly. Increase the mixer speed to medium. Add the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Continue mixing until the dough is smooth and glossy. Stop the mixer and set the dough aside.
  4. In a separate shallow dish or container, combine the sugar and cinnamon. Mix well and set this cinnamon-sugar mixture aside for coating the churros later.

For the Dipping Sauce:

  1. Set up a double-broiler: fill the bottom pot with a few inches of water and bring it to a simmer over medium heat. Place the chopped Abuelita® Mexican Chocolate Drink tablets in the top of the double-broiler. Melt the chocolate, stirring occasionally until smooth.
  2. Remove the melted chocolate from the heat (but keep it over the warm water if possible to keep it fluid). Gradually add the heavy cream, stirring continuously with a wooden spoon or whisk until the sauce is smooth and well combined. Keep warm until ready to serve.
  3. Spoon the churro dough mixture into a pastry bag fitted with a large star-shaped tip (such as an Ateco 826 or 827). Carefully pipe 6-inch strips of batter directly into the hot oil. Do not overcrowd the fryer; work in batches to maintain oil temperature and ensure even cooking.
  4. Cook the churros for 4-7 minutes, turning them once halfway through, or until they are a beautiful golden brown on both sides and cooked through. Using a metal slotted spoon or tongs, remove the fried churros and transfer them to a plate lined with paper towels to drain excess oil.
  5. While the churros are still warm, gently toss them in the prepared cinnamon-sugar mixture to coat thoroughly. Serve the warm, cinnamon-sugar churros immediately with the rich Mexican chocolate dipping sauce. Enjoy this delightful combination!
