Hello everyone, Carisa here from Messes to Memories! I am absolutely thrilled to share one of my most cherished healthy dinner creations with you all. These unique Chicken Apple Tacos emerged from a creative culinary experiment my mom and I cooked up during my college days. What began as a spontaneous idea has, over the years, blossomed into an unwavering family favorite, eagerly anticipated at our dinner table.
The Unexpected Journey to a Family Favorite
I recall a visit home from college when my mom and I were pondering dinner. We craved something new, exciting, and utterly delicious. While brainstorming, the concept of Chicken Apple Tacos surfaced. Initially, I was quite resistant. The idea of soft, cooked apples in a savory dish wasn’t particularly appealing to me. My mom, however, with her exceptional powers of persuasion, convinced me that it was worth a try. Reluctantly, I agreed to test out this unusual combination, unsure of what to expect.
To my astonishment, the result was nothing short of spectacular. This dish immediately rocketed to the top of my list of all-time favorite meals! The fusion of flavors is truly out of this world, offering a delightful balance of sweet, savory, and a hint of spice. Beyond its incredible taste, it scores major points for being both unique and wonderfully fun to prepare and eat. Plus, it’s inherently super healthy – I mean, it’s packed with apples! Add in some crisp lettuce, a sprinkle of cheese, and top it off with generous dollops of homemade salsa and creamy guacamole. Mmm… two of my absolute favorite accompaniments!
It’s funny how traditions form; I consistently find myself pulling out this recipe every January. I’ve discovered that slicing them a little thicker and cooking them precisely until they are tender yet still possess a delightful crispness and juiciness, rather than becoming soggy, truly makes this dish sing. That perfect texture, combined with their natural sweetness and the savory chicken, creates an explosion of flavor that will leave you wanting more.

Ingredients
- 1 tablespoon olive oil
- 3 chicken breasts, sliced
- ½ teaspoon salt
- ½ teaspoon ground nutmeg
- ½ teaspoon black pepper
- 1 tablespoon butter
- 2 cup thinly sliced onion
- 2 cup sliced, peeled Granny Smith apples
- 2 cloves garlic, minced
- 8 6-inch flour tortillas
Instructions

Heat olive oil in a large nonstick skillet over medium-high heat. Evenly sprinkle the sliced chicken breasts with salt, nutmeg, and black pepper. Add the seasoned chicken to the hot pan and sauté for approximately 7 minutes, or until fully cooked through and beginning to brown nicely. Remove the cooked chicken from the pan and set aside to keep warm.

In the same pan, melt the butter. Add the thinly sliced onion and cook for about 4 minutes, stirring frequently, until the onion becomes tender and translucent. Incorporate the sliced apples into the pan and continue to cook for another 6 minutes, stirring often, until the apples are golden brown and slightly softened but still retain a pleasant crispness. Finally, add the minced garlic and cook for just 30 seconds more, until fragrant. Return the cooked chicken to the pan with the onion and apple mixture, cooking for an additional 2 minutes to ensure everything is thoroughly heated through and flavors are well combined.

Assemble your tacos by spooning the chicken and apple mixture into the warm flour tortillas. Serve immediately with your favorite toppings, such as fresh salsa, shredded lettuce, creamy guacamole, and a sprinkle of cheese. Enjoy this unique and healthy flavor combination!

- For a quicker preparation, you can use pre-cooked shredded chicken. Simply add it to the pan with the cooked onions and apples in step 2 to heat through.
- Granny Smith apples provide a wonderful tartness that balances the savory chicken, but feel free to experiment with other firm, crisp apple varieties like Honeycrisp or Fuji for a slightly sweeter profile.
- Consider adding a squeeze of fresh lime juice over the filling just before serving for an extra pop of brightness.
