A Sweet Milestone: Two Years of Passion, Baking, and Community

It feels like just yesterday, yet it’s truly been two incredible years since I embarked on this blogging adventure! February 27th, 2012, at 5:22 pm EST – that exact moment is forever etched in my memory. I can still vividly recall my finger hovering over the ‘publish’ button, a mix of excitement and nervous anticipation swirling inside me, before finally pressing it for the entire world to see. Back then, I remember wondering if anyone would ever truly read what I wrote, or if this ‘blogging thing’ would ever amount to anything significant.

My initial intention was wonderfully simple: to carve out a creative space that was entirely my own – a personal sanctuary where I could explore my passion for cooking and baking without interruption. I dreamt of finding a few like-minded individuals who shared my enthusiasm for delicious food and kitchen experiments. Little did I know how profoundly important this blog would become to me. It quickly evolved into my ‘baby,’ demanding countless hours of dedication. From meticulously crafting posts and capturing appetizing photographs to tweaking the blog’s design and wrestling with the complexities of HTML, every moment has been a labor of love. There were times I swore I could feel my brain cells exploding with new information, but every challenge only deepened my commitment.

The Unexpected Blessings: Building a Vibrant Food Blogging Community

Never in my wildest imagination would I have predicted the incredible growth and the vibrant community that has flourished around this little corner of the internet. To reflect on having almost 27,500 followers on Facebook, over 2,600 on Twitter, more than 17,000 on Pinterest, and over 450 on Instagram still absolutely blows my mind every single day! These aren’t just numbers to me; they represent real people, real connections, and a shared love for delicious food.

I often don’t say it enough, but your unwavering support makes this ‘job’ truly exceptional. I deeply appreciate each and every one of you who takes the time to stop by my blog, read a recipe, leave a comment, or follow along on social media. Your engagement transforms my passion into a truly rewarding endeavor. This journey has brought immense blessings in more ways than I can count – from unexpected financial stability for my family, making this my cherished full-time occupation, to forging incredible friendships with fellow bloggers and the most amazing, supportive fans. The first two years have been an absolute blast, filled with learning, creativity, and countless memorable moments. I eagerly look forward to what lies ahead and want to express my heartfelt gratitude for being an integral part of this wonderful adventure. (Hugs to you all!)

Ingredients

For the Cupcakes

  • ¾ cup hot brewed coffee
  • ½ cup unsweetened baking cocoa
  • 3 teaspoons ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • ¾ cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 3 large eggs
  • ¾ cup buttermilk
  • 2 teaspoons pure vanilla extract

For the Dulce de Leche Cream Cheese Frosting

  • 1 can dulce de leche (caramelized sweetened condensed milk), 13.4 oz.
  • 1 package cream cheese, softened (8 oz.)
  • ½ cup heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line 24 muffin or cupcake holes with paper liners. Set the prepared pan aside.
  2. In a medium-sized bowl, combine the hot brewed coffee, unsweetened baking cocoa, and ground cinnamon. Whisk these ingredients together until the mixture is smooth and free of lumps. Set it aside to cool slightly while you prepare the remaining ingredients.
  3. In a separate medium bowl, whisk together the all-purpose flour, baking powder, salt, and baking soda until they are well blended and evenly distributed. Set this dry mixture aside.
  4. In a large mixing bowl, using an electric mixer, beat the softened butter and granulated sugar on high speed until the mixture becomes light, fluffy, and creamy, typically for 2-3 minutes.
  5. Add the eggs to the butter and sugar mixture, one at a time, ensuring you beat well after each addition until fully incorporated.
  6. In a small bowl, combine the buttermilk and pure vanilla extract, then stir this into the slightly cooled coffee mixture from step 2.
  7. Now, you will alternately add the dry flour mixture and the wet coffee mixture to the butter-egg mixture. Begin by adding half of the flour mixture, beating on low speed until just combined. Then, add half of the coffee mixture, mixing until incorporated. Repeat this process with the remaining flour and coffee mixtures. Beat the entire batter on medium speed, scraping down the sides of the bowl occasionally, until the mixture is well combined and smooth. Be careful not to overmix.
  8. Divide the cupcake batter evenly among the 24 paper-lined muffin tins, filling each liner about two-thirds full.
  9. Bake for 18-23 minutes, or until a wooden toothpick inserted into the center of one of the cupcakes comes out clean, indicating they are fully cooked.
  10. Allow the baked cupcakes to cool in their pans for 10 minutes before carefully transferring them to a wire rack to cool completely. It’s crucial that the cupcakes are entirely cool before frosting.
  11. For the Frosting: While the cupcakes are cooling, prepare the indulgent frosting. In a large bowl, beat the dulce de leche and softened cream cheese on high speed until the mixture is thoroughly blended, smooth, and creamy. Remember to scrape down the sides of the bowl as needed to ensure everything is incorporated.
  12. Gradually add the heavy whipping cream to the dulce de leche and cream cheese mixture, continuing to beat on high speed until stiff peaks form, creating a luscious, pipeable frosting.
  13. Once the cupcakes are completely cool, generously frost each one with the Dulce de Leche Cream Cheese Frosting. You can use a piping bag for a decorative swirl or simply spread it with a knife.
  14. Serve these delicious Mexican Chocolate Cupcakes immediately for the best experience, or refrigerate them until you are ready to serve. For optimal flavor and texture, it’s best to let them come to room temperature for about 15-20 minutes before serving.

Chef’s Notes

  • Make Ahead Tip: If you’re short on fridge space or planning ahead, you can bake the cupcakes a day in advance and store them at room temperature in an airtight container. Prepare the Dulce de Leche Cream Cheese Frosting just before you plan to serve, and then frost the cooled cupcakes.
  • A Touch of Heat: For an even more authentic Mexican chocolate experience, consider adding a tiny pinch (⅛ teaspoon) of cayenne pepper to the cupcake batter along with the cinnamon. This subtle spice will enhance the chocolate flavor without making the cupcakes overtly hot.
  • Perfect Presentation: Garnish your frosted cupcakes with a dusting of cocoa powder, a sprinkle of extra cinnamon, or a small drizzle of leftover dulce de leche for an elegant finish.
