Ingredients
For the pork
- 1 ½ – 2 pounds pork tenderloin, cut into 2-inch cubes
- 1 jar Peach Pineapple Chipotle Salsa (I used the Great Value brand), 24 oz.
- 1 chipotle chile in adobo sauce, chopped plus 1 tbsp. sauce from the can
- 2 cups water
Pineapple Peach Salsa
- 1 can pineapple tidbits, drained, 20 oz.
- 1 large peach, pit removed and flesh chopped
- ¼ cup red onion, chopped
- 1 handful cilantro, chopped
- 2 tablespoons lime juice
Additional Ingredients for Serving
- Flour tortillas, warmed
- Shredded Cabbage
- Fresh Pineapple Peach Salsa (prepared above)
Instructions
- In a medium bowl, combine all of the pineapple peach salsa ingredients. Mix well and refrigerate until serving time.
- Place all of the “For the pork” ingredients into a 3-5 quart Dutch oven. Cover the pot and bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and allow it to simmer gently for 15 minutes.
- Carefully remove the lidded pot from the heat and immediately place it inside the Wonderbag. Close the Wonderbag tightly to ensure maximum heat retention. Allow the pork to slow cook for a minimum of 4 hours, or up to 12 hours, until it is tender and easily shreddable.
- Once cooked, remove the meat from the pot and shred it using two forks. If desired, add a few tablespoons of the cooking liquid/sauce from the pan back to the shredded pork to keep it moist and flavorful.
