Ingredients
- 2 cups water
- 1 cup quinoa
- 1 small red apple, cored and chopped
- 1 small green apple, cored and chopped
- 1 cup red grapes, halved
- 1 cup green grapes, halved
- ½ cup raisins
- ½ cup slivered almonds, 2 oz.
For the dressing
- ¼ cup apple juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Pinch salt and pepper
- 2 tablespoons olive oil
Instructions
- Rinse quinoa thoroughly under cold water. In a medium saucepan, combine the water and rinsed quinoa. Bring the mixture to a boil. Once boiling, reduce the heat to medium-low, cover the saucepan tightly, and let it simmer for 10-15 minutes, or until all of the water has been absorbed by the quinoa. Remove from heat and allow it to sit, covered, for another 5 minutes to steam. Finally, fluff the cooked quinoa gently with a fork.
- Transfer the fluffed quinoa to a medium-sized mixing bowl. Add the chopped red and green apples, halved red and green grapes, plump raisins, and crunchy slivered almonds. Mix all the ingredients gently to combine, ensuring the fruits and nuts are evenly distributed throughout the quinoa. Set the bowl aside while you prepare the dressing.
- In a small separate bowl, whisk together all the dressing ingredients: apple juice, apple cider vinegar, honey, Dijon mustard, salt, pepper, and olive oil. Continue whisking until the dressing is thoroughly combined and emulsified. Pour the prepared dressing over the quinoa and fruit mixture in the medium bowl. Mix gently once more to ensure every component is lightly coated with the flavorful apple vinaigrette. Serve immediately for a warm and fresh experience, or refrigerate and serve cold for a refreshing salad.

- Not a fan of quinoa or looking for a different texture? You can easily substitute couscous for the quinoa in this recipe. Simply follow the package directions for cooking couscous and then proceed with the rest of the steps.
