Sweet potato fries topped with plenty of freshly chopped corned beef, a rich Swiss cheese sauce, and tangy sauerkraut! Serve this incredible dish with Russian dressing for an unforgettable meal that combines a classic sandwich with everyone’s favorite side.

Ingredients

For the Reuben Fry Basket

  • 2 – 3 lb. Corned beef brisket
  • 1 bag Alexia Sweet Potato Fries with Sea Salt, 20 oz. (or Alexia Onion Rings / Spicy Sweet Potato Fries)
  • Swiss Cheese Sauce (see recipe below)
  • 1 can sauerkraut, warmed, 14.5 oz.
  • Fresh parsley, for garnish (optional)
  • Russian dressing, for serving (optional)

For the Swiss Cheese Sauce

  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded Swiss cheese, 8 oz.

Instructions

To prepare the corned beef:

  1. Place corned beef in a Dutch oven and cover completely with water. Add the contents of the seasoning packet, if provided and desired, for extra flavor. Bring the water to a rolling boil.
  2. Once boiling, reduce the heat to low, cover the Dutch oven with a lid, and let it simmer for 2-3 hours. Cook until the corned beef is incredibly tender and can be easily shredded with a fork.
  3. After the corned beef is cooked to perfection, carefully remove it from the pan and transfer it to a cutting board. Chop the corned beef into small, bite-sized pieces. Set aside and keep warm until ready to assemble the fry baskets.

After the corned beef is cooked:

  1. While the corned beef is simmering or cooling, prepare the Alexia Sweet Potato Fries with Sea Salt according to the package directions. Aim for perfectly crispy fries.
