Do you look forward to breakfast as much as I do? Sometimes I think I’m in the minority! While I can happily grab a piece of toast and coffee, my family loves a hearty breakfast. And, let’s be honest, it’s a nice change of pace from the usual cereal or oatmeal!

As a big fan of Mexican food, living in Phoenix with its amazing array of restaurantes mexicanos, I often turn to tacos for a flavorful and satisfying breakfast. This version combines ham, eggs, and green chilies for a truly delicious experience.

Breakfast Tacos with Ham, Green Chilies, Eggs, and Cheese

When I’m craving something South of the Border for breakfast, I often turn to tacos – because you can’t get more Mexican than tacos! In this variation, I decided to use ham, eggs and green chilies. Tacos for breakfast? ¡No hay nada mejor que esto! – It doesn’t get any better than this!

Ingredients

  • 6 large eggs
  • ¼ cup milk
  • salt and pepper to taste, optional
  • 1 cup cooked ham, cubed
  • 1 can green chilies, 4 oz.
  • 1 to 1 ½ cups Cheddar cheese, shredded, 4-6 oz.
  • 8-10 corn or flour tortillas, warmed
  • salsa, sour cream, or guacamole, optional

Instructions

  1. In a medium bowl, whisk the eggs, milk, salt, and pepper.
  2. Spray a large skillet with cooking spray. Heat over medium-high heat.
  3. Cook and stir (scramble) the eggs until almost firm. Add the ham and green chilies and continue to cook until the eggs are firm and scrambled.
  4. Top warmed tortillas with egg mixture, then cheese. Serve with salsa, sour cream, or guacamole if desired.

Notes

  • This is a great basic recipe where you can swap bacon for ham, use a different cheese, pick up new tortillas…
