- 1 ½ cups brown rice, uncooked
- 2 cups romaine lettuce, chopped
- 1 can black beans, 15.25 oz can, rinsed and drained
- 1 can sweet whole kernel corn, 15.25 oz, drained
- 1 large tomato, diced
- Optional: Cooked and shredded chicken, seasoned ground turkey, or extra black beans for protein.
Light Tomatillo Dressing
- 2 cups Greek yogurt (plain, unsweetened)
- ¼ bunch cilantro, cleaned and pulled from stems
- 1 tomatillo, cut into chunks and paper skin removed
- ¼ teaspoon minced garlic
- ½ jalapeño, seeds removed (adjust to desired spice level)
- juice of 1 lime
- ½ teaspoon salt
- 1 green onion, all of the green part

Cook brown rice according to package directions. Once cooked, fluff with a fork and set aside.
