The Sweet Story Behind These Simple Strawberry Yogurt Popsicles
It’s a bit of a confession, but despite blogging for over four years, this marks the very first time I’m officially sharing a popsicle recipe on the blog! I know, it’s almost scandalous for a food blogger, especially one living in the perpetually warm Arizona desert. My primary defense? Popsicles simply don’t last long enough in our house for a proper photoshoot. The battle against melting treats has always been fierce, and more often than not, the joy of eating them wins out over the pursuit of the perfect picture.
The truth is, capturing a pristine popsicle before it starts to weep and melt into a sugary puddle is a true test of speed and patience for any food photographer. I’ve attempted it a few times in the past, only to be disappointed with the results, leading to those recipes never seeing the light of day. But this time was different. When faced with the challenge, I found a renewed determination. There’s a certain magic that happens when you know you have mere seconds to get the shot, and I surprising thrive under that kind of delicious pressure!
The #12Bloggers Challenge: A Delicious Inspiration
My motivation to finally conquer the popsicle photography hurdle came from this month’s #12bloggers theme: frozen desserts. It felt like fate, a gentle nudge from the universe telling me it was high time to up my popsicle game! For those unfamiliar with the #12bloggers series, it’s a fantastic monthly event where twelve bloggers come together on the 12th of each month to share a themed recipe, always featuring twelve ingredients or less. This collaboration is a wonderful way to discover new recipes and creative ideas from a diverse group of talented food enthusiasts.
The theme was perfectly timed for the scorching summer heat we experience here in Arizona. With daily temperatures often soaring, frozen treats aren’t just a dessert; they’re a necessity, a way of life! Knowing I had a deadline and a theme to inspire me, these Strawberry Yogurt Popsicles quickly became our go-to. They are not only incredibly delicious but also remarkably healthy and, with their two-ingredient simplicity, an absolute breeze to prepare.

Ingredients
- 1 lb. fresh strawberries, rinsed and hulled
- 2 cups vanilla-flavored Greek yogurt
Instructions
- Place the fresh strawberries in the bowl of a food processor. Cover and pulse a few times until the strawberries are chunky, with only a few slightly larger pieces remaining. Alternatively, you can mash the strawberries thoroughly with a fork or potato masher if you don’t have a food processor.
- Transfer the vanilla-flavored Greek yogurt to a large mixing bowl. Gently pour the pureed (or mashed) strawberries over the top of the yogurt. Carefully fold the strawberries into the yogurt mixture until just combined, creating a beautiful swirl of pink and red. Be careful not to overmix, as you want to maintain some of the strawberry chunks for texture and visual appeal.
- Spoon the strawberry-yogurt mixture evenly into your popsicle mold. Insert popsicle sticks according to your mold’s instructions.
- Place the filled popsicle mold into the freezer. Freeze until the popsicles are completely solid and set. This usually takes at least 4-6 hours, but for best results, allow them to freeze overnight.
Notes
- Easy Unmolding: To easily remove the frozen popsicles from the mold, simply dip the bottom of the popsicle mold into a shallow dish of hot water for a few seconds. This will slightly loosen the edges, allowing the popsicles to slide out smoothly.
- Sweetness Adjustment: If your strawberries aren’t very sweet or if you prefer a sweeter popsicle, you can add a tablespoon or two of honey, maple syrup, or your preferred sweetener to the strawberry mixture before combining it with the yogurt.
- Flavor Variations: Feel free to experiment with other fruits! Blueberries, raspberries, or even mango can be substituted for strawberries. Just ensure the fruit is well-mashed or pulsed.
