  • ½ cup (1 stick) butter, softened

  • 2 packages Martha White© Apple Cider Muffin Mix, 7 oz each
  • ½ cup chopped pecans

For the Apple Cider Buttercream Frosting

  • ½ cup (1 stick) butter, softened
  • 3 cups powdered sugar
  • 3 – 4 tablespoons apple cider

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan by spraying it generously with cooking spray. For easier removal, you can also line the bottom of the pan with a circle of parchment paper before spraying. Set aside.
  • In a large mixing bowl, using an electric mixer, cream the softened butter until it is light in color and fluffy, about 2-3 minutes. This step incorporates air, making your cookie cake tender. Add the large egg and vanilla extract, mixing until just combined. Scrape down the sides of the bowl to ensure everything is well incorporated.
  • Gradually add both packages of Martha White© Apple Cider Muffin Mix to the wet ingredients. Mix on low speed until the dough just comes together. Be careful not to overmix. Gently fold in the chopped pecans until they are evenly distributed throughout the dough.
