Why This BBQ Chicken Quinoa Skillet is Your Perfect Healthy Start

Happy (almost) New Year from Andi at The Weary Chef! It’s an absolute pleasure to share this delightful dinner recipe with you. If you’re new to my kitchen, you’ll quickly learn that easy, delicious dinners are my passion. While I occasionally indulge in cheesy delights, my general approach to cooking, especially at this time of year, is to keep things on the healthier side without compromising on flavor.

Let’s be honest, the holiday season often turns treats like cookies, candy, and decadent eggnog lattes into their own food groups. (And who can resist them? I certainly can’t!) As we step into a new year, it’s only natural to feel the need for a healthy reset. This BBQ Chicken Quinoa Skillet is more than just a meal; it’s a flavorful intervention. It’s a wonderful way to recover from all the festive indulgence, loaded with satisfying taste, incredibly quick to assemble even on your busiest evenings, and truly feels like a comforting hug in a bowl.

The Power of Quinoa in Your Skillet

Quinoa, often hailed as a superfood, is the foundation of this wholesome skillet dinner. It’s a complete protein, meaning it contains all nine essential amino acids, making it an excellent choice for vegetarians, vegans, and anyone looking to boost their protein intake. Beyond protein, quinoa is rich in fiber, which aids digestion and helps maintain a feeling of fullness, crucial for managing those post-holiday cravings. It’s also naturally gluten-free, a significant benefit for those with gluten sensitivities or dietary preferences. Its slightly nutty flavor and satisfying texture make it a versatile grain that perfectly complements the savory BBQ chicken.

Incorporating quinoa into your diet is a simple yet powerful step towards healthier eating. This skillet recipe makes it effortless, absorbing all the delicious flavors of the BBQ sauce and spices, transforming a nutritious grain into a truly enjoyable experience. If you’re new to quinoa, rest assured that its preparation is straightforward, and the result is a fluffy, nutrient-dense base for your meal.

Convenience and Customization: Making it Your Own

One of the best features of this BBQ Chicken Quinoa Skillet is its adaptability and ease. I’ve designed this recipe with convenience in mind, using shredded rotisserie chicken. This simple shortcut is a lifesaver on busy weeknights, allowing you to get a wholesome meal on the table in minutes. However, don’t feel limited! If you have leftover cooked chicken from another meal, that works beautifully too. Alternatively, you can easily cook and shred two boneless, skinless chicken breasts specifically for this dish. For an extra layer of flavor when cooking fresh chicken, I highly recommend seasoning it with a touch of Cajun spice or your favorite poultry blend before shredding.

The beauty of a skillet dinner lies in its flexibility. Feel free to add in your favorite vegetables – bell peppers, corn, or black beans would all make fantastic additions, boosting the fiber and nutrient content even further. Adjust the amount of BBQ sauce to your preference, and if you like a little heat, don’t shy away from adding more hot sauce. This recipe is built to be customized to your family’s tastes, ensuring everyone loves it. We certainly did, and I hope it becomes a cherished recipe in your home. Wishing you all a wonderful, healthy, and happy year!

Ingredients

  • 2 teaspoons olive oil
  • ½ red onion, diced
  • 2 cloves garlic, minced or crushed
  • 14 oz. reduced-sodium chicken broth
  • ½ teaspoon ground cumin
  • 1 ¼ cup uncooked quinoa, rinsed
  • ½ cup BBQ sauce, plus a little more for drizzling
  • hot sauce to taste, optional
  • 2 cups shredded chicken (rotisserie chicken, or cooked boneless, skinless chicken breasts)
  • ½ cup shredded 2% milk cheddar or Mexican blend cheese, or more to taste
  • 4 green onions, sliced

Instructions

  1. Heat olive oil in a 12-inch skillet over medium-high heat. Sauté the diced red onion until it becomes translucent. Add the minced or crushed garlic and continue to sauté for about a minute longer, just until the garlic turns fragrant and lightly colored. Pour in the reduced-sodium chicken broth and stir in the ground cumin. Bring the mixture to a gentle simmer.
  2. Stir the rinsed uncooked quinoa into the simmering broth. Reduce the heat to medium-low, cover the skillet tightly, and allow it to simmer for 15-20 minutes, or until all the liquid has been absorbed by the quinoa and it is tender and fluffy.
  3. Once the quinoa is cooked, stir in the BBQ sauce and hot sauce (if you desire a bit of a kick). Fold in the shredded chicken until everything is well combined and heated through. Evenly sprinkle the shredded 2% milk cheddar or Mexican blend cheese over the top of the skillet mixture. Replace the cover and cook over low heat for an additional 3-5 minutes, allowing the cheese to melt and the flavors to meld beautifully. Before serving, drizzle a little extra BBQ sauce over the top and garnish generously with sliced green onions. Serve hot and enjoy this comforting, healthy meal!

Notes

  • For a vibrant visual and slightly different texture, try using tri-color quinoa.
  • Adjust the amount of BBQ sauce to match your personal taste preference. A smoky or spicy BBQ sauce can add another dimension of flavor.
  • Feel free to add other vegetables like bell peppers, corn, or black beans during step 3 for added nutrition and bulk.
  • Ensure quinoa is thoroughly rinsed before cooking to remove saponins, which can give it a bitter taste.
