This impressive giant cookie is generously studded with M&M’s® Red Velvet chocolate candies and expertly frosted with a rich, homemade Red Velvet Buttercream. Ingredients
- ¾ cup butter, softened (1 1/2 sticks)
- ¾ cup packed light brown sugar
- ¼ cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 bag M&M’s® Red Velvet flavored candies (9.90 oz.)
- ¼ cup white chocolate chips
For the Red Velvet Buttercream Frosting
- ½ cup butter, softened (1 stick)
- 1 tablespoon cocoa powder
- 3 tablespoons water
- 4 cups powdered sugar
- 2 teaspoons LorAnn Red Velvet Bakery Emulsion
Instructions
- Preheat oven to 350°F (175°C). Spray a 9-inch cake pan with cooking spray, or line the bottom with a piece of parchment paper. Set aside.
- In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar with an electric mixer until the mixture is light and fluffy, which should take approximately 3-4 minutes. Incorporate the egg and vanilla extract, continuing to mix until all ingredients are well combined and smooth.
- In a separate medium bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt. Gradually add this dry flour mixture to the wet butter mixture, mixing on low speed until just combined and a soft dough forms. Be careful not to overmix.
- Reserve ¼ cup of the M&M’s® Red Velvet flavored candies for decorating later. Gently fold the remaining M&M’s® and white chocolate chips into the cookie batter until evenly distributed.
- Press the cookie dough evenly into the prepared 9-inch cake pan. Your clean hands or a spatula can help ensure it’s spread smoothly and fills the pan from edge to edge. Bake for 20-25 minutes, or until the edges are golden brown and the center is set.

- Once the cookie cake is completely cool, carefully run a butter knife around the outside edge to loosen it from the pan. Invert the pan onto a serving plate or cooling rack, then flip the cookie cake right side up onto your serving dish. Decorate the cooled cookie cake generously with the Red Velvet Buttercream Frosting, using a piping bag with a 1M tip for a beautiful swirl, or simply spreading it with an offset spatula.
