- 2 cups heavy whipping cream
- 1 cup half and half
- 1 cup sugar

Instructions
- In a medium saucepan, combine the heavy whipping cream, half and half, sugar, and lemon zest. Bring to a simmer over low heat. Cook and stir until the sugar is dissolved, about 5 minutes. Cover and allow the mixture to steep for 10 minutes, allowing the lemon zest to infuse its wonderful flavor.
- Uncover the saucepan and bring the mixture back to a simmer over low heat. In a separate medium bowl, beat the egg yolks thoroughly. Slowly add about one cup of the hot cream mixture into the beaten yolks, whisking constantly to temper the eggs and prevent them from scrambling. This step is crucial for achieving a smooth, custard-like base. Pour the tempered yolk mixture back into the remaining cream mixture in the saucepan and stir to combine. Continue to cook and stir the mixture gently over low heat until it thickens slightly and just coats the back of a spoon – this usually takes about 5-10 minutes. Be careful not to boil the mixture.
